Sometimes life is black and white. Sometimes it's a little blurred around the edges. Those blurred lines give you an opportunity to define your life. To find out what I wanted I needed to feel vulnerable and a little afraid. I've always said that being fearless was born out of my fear. What was I afraid of most? It wasn't dying. Sure, there's a clear picture of mortality painted with a diagnosis, but that wasn't it. . My fear was not watching Bella grow up and see her happy with her own family. It only took a split second for me to realize that nothing would stop me from doing that until I was GD good and ready!! . Sometimes the picture painted aren't so clear and it's easy to find your way through the fog. It's easy to get caught up in the glorification of busy. It's easy to forget what made life so tangible at the time. Fear is an Amazing Motivator. I definitely kick it up a notch when I'm afraid of something. . Thankfully nothing is crazy these days and things have a normalcy to them. It wasn't easy for me to transition back to the normal things in life. Lingering health issues frustrated me and sometimes it feels like an uphill battle. But it's not. . #EveryDayisAGift #Every1Matters - today I will do three things that help me get closer to my goal of good health. First I will take another walk on the beach. It's the closest thing to savasana (the end of yoga class) where I'm left to my own thoughts. . It was really hard for me once to sit still for two minutes. It isn't that much different when you're walking. You're alone with your thoughts (no music today). It's so easy to think of anything else but you. . Today I will reflect the sun in my heart. Today I will focus on what I can do, not what I cannot. Today I will visualize the clear lines of where I want to be and let the blurred lines fall into the background. Today I will be fearless enough to open my mind to forgive myself of my mistakes and move forward with direction. . Sometimes you feel like you're on the verge of a breakdown but you're not. That point where you want to back off? THAT is where change happens. It's not a breakdown. . It's a #BreakThrough πŸŽ€

Portabello Mushroom & Goat Cheese Omelet Recipe - FIXATE


This omelet is absolutely DELICIOUS!!  It's very easy to make and it tastes so good you won't believe that it's healthy.  YES, HEALTHY!!  If you make this once it will not take you as long to prep and cook it the second time.  I prepped everything then cooked it.  Next time I'll start with sautΓ©ing the mushrooms then prepare the rest.  TIME SAVER for sure. The goat cheese gives these eggs a decadent taste.  See variations at the bottom of the recipe.  Be creative!

Portabello Mushroom & Goat Cheese Omelet
Serves: 1 Prep Time: 15 min. Cook Time: 8 min.
21DF: 1G, 1R, 1/2B, 1 tsp

Ingredients:
2             Large Eggs
2 Tbsp.   Water (or unsweetened almond milk)
1/2 tsp.    Sea Salt or Himalayan Sea Salt
1 dash     Ground Black Pepper
1 tsp.       Olive Oil, divided use
3/4 cup    Thinly Sliced Baby Portabello (or button) Mushrooms
1 Tbsp.    Crumbled Goat Cheese
1 Tbsp.    Chopped Fresh Flat Leaf Italian Parsley (optional)

Directions:
1.  Combine eggs, water, salt and pepper in a medium bowl; whisk to blend.  Set aside.
2.  Heat 1/2 tsp. oil in medium skillet over medium-low heat.
3.  Add mushrooms; cook, stirring frequently, for 5 minutes, or until tender.  Remove mushrooms from pan.  Set aside.
4.  Heat remaining 1/2 tsp. oil in same skillet over medium-low heat.
5.  Add eggs.  Do not stir.  As eggs set, lift edges, letting uncooked portion flow underneath.
6.  When eggs are almost set add mushrooms and cheese.  Cook for 1-2 minutes, or until heated through.  Gently fold in half.
7.  Serve omelet immediately, garnished with parsley, if desired.
